Vegan Apple Cider Doughnut

These vegan apple cider doughnuts are a delightful treat that perfectly captures the flavors of fall. They are tender, moist, and infused with the rich taste of apple cider, making them an irresistible indulgence for vegans and non-vegans alike. Ingredients:

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup organic granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Wet Ingredients:

  • 3/4 cup unsweetened apple sauce ( see our homemade appleasauce recipe)
  • 1/2 cup apple cider
  • 1/4 cup plant-based milk (e.g., almond, soy, or oat milk)
  • 1/4 cup melted coconut oil (or any neutral-flavored oil)
  • 1 teaspoon vanilla extract

For Coating:

  • 1/2 cup organic granulated sugar
  • 1 teaspoon ground cinnamon

Instructions:

  • Preheat your oven to 350°F (175°C). Grease a doughnut pan with oil or cooking spray.
  • In a large mixing bowl, whisk together all the dry ingredients: flour, sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
  • In a separate bowl, combine the wet ingredients: unsweetened apple sauce, apple cider, plant-based milk, melted coconut oil, and vanilla extract. Mix well until everything is well combined.
  • Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined, being careful not to overmix the batter.
  • Spoon the doughnut batter into the prepared pan, filling each cavity about two-thirds full.
  • Bake the doughnuts in the preheated oven for 12-15 minutes or until a toothpick inserted into the center comes out clean.
  • While the doughnuts are baking, prepare the coating. In a shallow bowl, mix together the granulated sugar and ground cinnamon.
  • Once the doughnuts are baked, remove them from the oven and allow them to cool in the pan for a few minutes. Then carefully transfer them to a wire rack.
  • While the doughnuts are still warm, lightly brush each one with a little apple cider, and then immediately roll them in the cinnamon-sugar mixture to coat them evenly.
  • Let the doughnuts cool completely on the wire rack before serving.
