Don’t you just love quick and easy treats with no baking required? We do too! These No Bake Energy Balls are perfect for your little balls of energy’s lunch boxes or for an aferschool snack.
The following is a recipe derived from www.VeganHeaven.org
Ingredients:
- 1/3 cup raw almonds
- 1/2 cup pitted dates
- 1/2 cup grated orange carrots
- 1/2 cup grated purple carrots
- 1/2 cup rolled oats
- 1/3 cup coconut flakes
- 1 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
(note: Trader Joe’s normally has bagged multicolored carrots in stock. If you only have orange carrots, then 1 cup of orange carrots can be used for recipe)
Instructions:
- Place almonds and pitted dates in a food processor or blender and pulse until a sticky consistency forms
- Grate carrots
- Add almond/date mixture to the bowl of grated carrots
- Add rolled oats, coconut flakes, cinnamon and vanilla extract to the bowl and lighlty stir
- Knead the mixture with hands until all ingredients are blended together
- Form balls of the mixture using a spoon or a cookie dropper ( makes about 12 balls depending on size of spoon or cookie dropper you use)
- Coat the balls by rolling into more coconut flakes ( optional)
- Ready to eat or store in the refrigerator using an airtight container , separating layers of balls with parchment paper.
