vegan black bean enchiladas
(This is Part 2 of the Vegan- Friendly Black Bean Burger Recipe)
Again, we “veganized” the recipe and used the leftover Black Bean Burger recipe in the previous post linked above.
Ingredients you will need:
Make the Vegan-Friendly Black Bean Burger recipe (1 cup of the leftover Black Bean Burger mixture
8-10 ounces of Red Enchilada Sauce ( If you have an enchilada sauce recipe you like, please use. But for those nights that you are trying to make dinner between soccer and homework we suggest either Hatch Organic, Frontera, or Simply Organic Red Enchilada Sauce)
8 warmed corn tortillas or whichever tortillas you prefer (Companies like Mission and BFree have vegan and gluten-free options)
½ cup of vegan-friendly shredded cheese ( if you are looking to stay away from the processed cheese, we suggest trying a quick and easy vegan queso to pour on top before serving)
PREPARATION INSTRUCTIONS
- Pour half of the enchilada sauce onto the bottom of an 11X13 baking dish.
- Put 2 tablespoons of the black bean mixture toward the bottom ⅓ of the tortilla, wrap, and place seam side down in the baking dish. Continue this process with the remaining tortillas.
- Pour the rest of the enchilada sauce over the top of the rolled tortillas.
- Sprinkle ½ cup of shredded vegan cheese on top (Or skip this part all together and pour the warm Quick Queso on top of the enchiladas before serving).
- Bake in a preheated 350 degree Fahrenheit oven for 15-20 minutes.
- Serve as is, or top with delicious toppings like guacamole, green chilis, plain vegan yogurt, and freshly chopped cilantro.
