These Blueberry Pie Squares are a delicious vegan dessert recipe inspired by the Happy Herbivore.
What you will need:
- 2 cups of frozen wild blueberries ( thawed)
- 2 Tbsp of pure maple syrup
- 2 tsp of vanilla extract
- 2 Tbsp of lemon juice
- 2 cups of rolled oats
- 1 tsp of aluminum-free baking powder
- 1 tsp of ground cinnamon
- 1 pinch of pink salt
- 2 ripe bananas
Directions:
- lined an 8Â inch metal baking dish with parchment paper and preheat the oven to 375 degrees
- In a bowl- stir together thawed blueberries, 1 Tbsp of the maple syrup, 1 tsp of the vanilla extract, and lemon juice ( set aside in refrigerator)
- Blend 1 cup of the dry rolled oats in a high speed blender or food processor until flour consistency
- In a bowl stir together blended oats with remaining 1 cup of dry rolled oats, baking powder, and ground cinnamon.
- In a separate bowl, mash the 2 bananas, add in rest of the maple syrup and vanilla extract- mix until a creamy consistency.
- Pour banana mixture into bowl with oat mixture and combine well.
- transfer half of the batter into the parchment lined 8 inch metal baking pan using a spatula to press the mixture down into the pan creating a crust.
- Take the blueberry mixture out of the refrigerator and strain the liquid before pouring the blueberries on top of the crust and carefully spreading blueberries into a single layer.
- Crumble the remaining oat mixture on top of the blueberries.
- Bake for 30-35 minutes or when GBD.
- Let sufficiently cool before cutting into squares.
- Top with vegan vanilla ice cream or coconut whipped cream ( optional)
