Vegan Butternut Squash and Chickpea Curry

Ingredients:

  • 1 medium-sized butternut squash, peeled, seeded, and diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of fresh ginger, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons avocado oil
  • Fresh cilantro leaves for garnish (optional)
  • Cooked rice or naan bread for serving

Instructions:

  1. Prepare the Butternut Squash: Peel the butternut squash, remove the seeds, and cut it into bite-sized cubes.
  2. Sauté the Aromatics: Heat the avocado oil in a large skillet or pot over medium heat. Add the chopped onion and sauté for 2-3 minutes until it begins to soften. Add the minced garlic and ginger, and sauté for another 1-2 minutes until fragrant.
  3. Add the Spices: Stir in the curry powder, ground cumin, ground coriander, turmeric, and paprika. Cook for another minute to toast the spices.
  4. Add Butternut Squash and Chickpeas: Add the diced butternut squash and chickpeas to the pot. Stir to coat them in the aromatic spice mixture.
  5. Pour in Tomatoes and Coconut Milk: Add the diced tomatoes (with their juices) and the coconut milk to the pot. Stir well to combine all the ingredients.
  6. Simmer and Cook: Bring the mixture to a gentle simmer. Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the butternut squash is tender. Stir occasionally to prevent sticking.
  7. Season and Serve: Taste the curry and season with salt and pepper as needed. If you prefer a spicier curry, you can add some red pepper flakes at this stage.
  8. Garnish and Serve: Serve the Vegan Butternut Squash and Chickpea Curry hot over cooked rice or with vegan flatbread. Garnish with fresh cilantro leaves if desired.
